Bleu Cheese Log/Ball

8 oz. crumbled bleu cheese
12 oz. SOFT cream cheese
1 can chopped olives
1 Tbsp. chopped green onions
1/2 cube Softened butter or margarine
8 oz. chopped nuts (your choice, I use walnuts)

Let ingredients stand at room temperature until soft. Drain chopped olives
on paper towels removing most of the moisture. Use 1 green onion, chop
finely and use half way up the stem using the green part mostly for color.
Mix all ingredients, EXCEPT nuts, thoroughly together. Cover and put in
refrigerator until hard enough to work with, usually overnight. Remove
mixture from bowl and shape into a log or a ball and pat with the chopped
nuts on all sides. Wrap in Saran wrap or similar and refrigerate until ready
to use. Serve with crackers.

I usually put my nuts in a pie pan and then after I've shaped the ball just
put it in the container to cover with the nuts. This way it isn't so messy.

You can make 3 smaller balls or 2 large ones. Enjoy!


Spinach Dip

(I should warn you I am one of those people who never measures anything so my measurements are approximate :-)!

1 pint sour cream
1 pkg vegetable soup mix
1 or 2 pkg frozen chopped spinach thawed (use more the more you like spinach) I don't cook mine some do -- either way drain well or the dip will be runny
4 heaping spoonful of mayonnaise (about 1 cup or so)
4 large handfuls of shredded cheese (I like Colby jack (ie, blend of Monterey jack and Colby) but cheddar works well also) -- I have NO idea what that translates to in cups, sorry!!!
1/2 pkg (6 oz maybe??) roasted almonds (although I had some chopped walnuts left over from the cheese ball and used them instead and it is good)
Bacon bits to taste OR if you are very kitchen oriented real bacon
crumbled :-)! (I usually put 1/3 to 1/2 a bottle of Bacos depending on how frisky I am LOL!!)
1 can of finely chopped (already or done by you :-)!!) water chestnuts

Mix it all together and let it sit overnight. Serve either on that thick bread ??? forget the name of it or with Triscuits (my favorite)


Bev's Cheese Ball

8 oz cream cheese
2 sm tins of red salmon
1 T lemon juice
2 tsp grated onion
1 tsp horse radish
1/4 tsp salt
1 pk pecans

All you do is mix everything together, except the pecans - they are for later....mix everything up, form a ball (if ya have a small party, separate make two small balls). Crush the pecans, and roll the ball(s) in them. Taa, daaa. Done. They also freeze really well.
