Kentucky Bourbon Sweet Potato Casserole

(I got this recipe for "Sweet Potato Delight" from Bill's mom, but adding the
bourbon was my idea - go figure!)

4 cups sweet potatoes, cooked and mashed
2 eggs, beaten a bit
1 cup sugar
1 tsp. vanilla
1/2 cup softened butter
3 Tbs. bourbon

Topping:
1 cup light brown sugar
1 cup chopped pecans
1/3 cup flour
1/3 cup butter

Mix first 6 ingredients thoroughly, pour into buttered casserole dish. Mix all topping ingredients together with a fork, sprinkle on top of casserole.
Bake for 30-45 minutes in 350 degree oven.

I don't mash the potatoes too much, I leave them kind of "chunky". I never do the same thing twice, sometimes adding crushed pineapple, sometimes sweetened condensed milk too. Grape-Nuts cereal can be substituted for the pecans in the topping too, then leave out the flour. Definitely not a low-cal recipe, but what the hey, it's Thanksgiving!

Sgt. Borowski’s Tuna Casserole (modified)

12 oz Noodles (spirals or elbows preferred)
2 6 oz cans Tuna in water
16 0z No Fat Sour Cream (1 ˝ containers)
4 oz regular sour cream.
1 LARGE Diced Onion
6 0z Lite Sharp Cheddar Cheese
4 oz Sharp Cheddar Cheese
1 can Reduced Fat Cream of Celery Soup
1 jar Chopped/diced Pimentos
Paprika

Preheat oven to 325

Cook Noodles. While they are cooking, dice onion , drain tuna, Mix all
ingredients together, adding the noodles once they are drained. Save enough
cheese to sprinkle on top.

Put all ingredients in a casserole dish. Sprinkle on remaining cheese, and
paprika.

Bake for 30 minutes or until casserole bubbles.

Enjoy.

I usually add a salad and some good French bread , or instead of salad,
another veggie...green beans, sweet peas in the pod, whatever..
